Tropical Ice Cream with Guava Passionfruit
By Holly Darnell, RD

Tropical ice cream? Is there anything more wonderful sounding? It's also delicious as expected, a great summer dessert recipe and relatively easy to make, including without dairy!
The keys are coconut milk, lively tropical flavors and collagen. We're talking a no-churn tropical ice cream that go toe-to-toe with any dairy variety.
Not all tropical ice creams need to have dairy, as coconut milk can play the same role to create creaminess and texture. Coconut milk is also a healthier fat and causes far fewer digestive issues than milk products.
Plus coconut milk makes for a more on-point tropical flavor. Think of it like a Piña Colada ice cream but with even more flavor. Speaking of that, you'll also use a cup of pineapple pieces that also deliver a fun, chewy texture to each bite.
Speaking of flavor, if we're going to create a tropical ice cream, then we're calling in the major fruits: We're talking guava, passionfruit and organic juices. You'll even juice a lime. This group of tropical fruits means tons of vitamin C as well as complex, can't beat flavor.
The collagen is one of our most popular: Multi Collagen Protein Beauty Within, featuring the sublime guava passionfruit flavor. It also serves to provide skin, gut and joint support.
This is a fun one to make. First, place a freezer friendly loaf pan in the freezer and allow to freeze for 30 minutes.
Next, in a high-speed blender, add in coconut milk, maple syrup, guava juice, passionfruit juice, orange juice, lime juice, vanilla extract, guava passionfruit collagen powder, pineapple and sea salt. Blend until smooth and creamy, scraping down the sides so that everything is incorporated.
Pour the mixture into the frozen container and place in the freezer. For the first hour, stir the mixture every 15 minutes before it completely freezes. Then continue to freeze for an additional four hours, best if overnight.
Before serving, allow to thaw for 15 minutes. Serve immediately and top with optional sprinkles. Note: This tropical ice cream can be kept in the freezer in a stored container for up to two months.
