Pineapple Ginger Lassi Drink

Have you ever tried a lassi drink? Popular in Indian cuisine, it's a yogurt-based fruit drink that is usually made with mango. Here's a delicious spin on the mango lassi called Pineapple Ginger Lassi Drink.
It's not only full of healthy ingredients like pineapple, ginger, coconut milk and cinnamon, but it also contains collagen powder to offer skin, joint and gut support.
Pineapple: Filled with antioxidants and phytonutrients, as well as the enzyme bromelain, it can help enhance digestion along with many other benefits.
Ginger: Ginger is loaded with beneficial compounds, over 100 in fact. It also imparts a zesty, peppery flavor.
Greek yogurt: Greek yogurt is thicker and higher in protein than standard yogurts but also usually lower in sugar and carbohydrates. It also contains probiotics. If you can't handle dairy, go with coconut yogurt.
Coconut milk: Coconut milk is a medium chain fatty acid that’s easily digested and converted to energy instead of being stored as fat.
Raw honey: One tablespoon of honey contains 64 calories, yet it has a relatively low glycemic load (doesn't raise blood sugar by much, especially compared to table sugar).

First, peel the ginger and dice finely. You can also use one teaspoon of ginger paste. You can use fresh pineapple, but frozen pineapple will deliver the ideal texture.
In a high-speed blender, place the ginger, pineapple, collagen powder, cinnamon, Greek yogurt, coconut milk and honey. Blend the mixture on high until combined.
Serve immediately, using a scraper to make sure you get every last drop. Top with additional pineapple if desired. Notes: You can store your smoothie in an air-tight container in the fridge for 1–2 days.
When to drink lassi? You can have before a meal, such as an Indian lunch or dinner, but also as a snack or even at breakfast time.

½ inch ginger, peeled and diced
1½ cups pineapple, frozen
2 scoops Multi Collagen Protein (or Vegetarian Collagen Peptides)
½ teaspoon cinnamon
2 cups plain, unsweetened Greek yogurt (or coconut yogurt)
½ cup coconut milk
2 teaspoons raw honey
1. In a high-speed blender, combine the ginger, pineapple, collagen powder, cinnamon, yogurt, coconut milk and honey. Blend the mixture on high until combined.
2. Serve immediately and top with additional pineapple if desired.
