No-Bake Matcha Cookies

These no-bake Matcha cookies are vegan, gluten-free and dairy-free yet full of delicious flavor. And with their lovely green color, these make for great holiday cookies (try our matcha donuts or the fabulous Christmas sugar cookies recipe while you're at it).
These matcha cookies are sure to satisfy any sweet tooth while providing you some natural energy while assisting with your health goals. This recipe uses one of our favorite products, Ancient Elixirs Superfood Matcha, which offers a clean source of sustained energy to help you power through your day. This blend combines time-tested superfoods and clinically studied adaptogens to help you manage stress and stay focused.

Quickly whip together the matcha cookie ingredients and stick them in the refrigerator for a few hours, or overnight. When you want to enjoy them, let sit at room temperature for 20 minutes. They are worth the wait!
Looking to pair them with more health-supporting matcha? Try these:
First, place all crust ingredients into a food processor and blend until dough is formed. You can also use a blender but it's more difficult to scrap out all of the mixture.
Use two muffin pans (with 12 slots each) and fill each slot with liners. Spread the crush dough evenly, then place in the freezer to chill while preparing the filling.
Put all filling ingredients in the food processor (or blender) and mix until well combined.
Remove the muffin pan from freezer and fill each liner about three-fourths of the way up with filling mixture. Put into the freezer for about two hours.
Defrost these matcha cookies in the refrigerator for 20 minutes before serving.

Ethan BoldtMatcha is a popular green tea that is often had in a latte or even a smoothie, but here it's used inventively in a no-bake matcha cookie. It's an ideal snack or even dessert, with a great macronutrient profile: 17 grams of carbs, 16 grams of fat and 4 grams of protein.
Crust Ingredients
3 cups walnuts
2 cups pitted dates
1 teaspoon vanilla
dash of sea salt
Filling Ingredients
1½ cups raw cashews, soaked overnight
2 cups fresh coconut meat
½ can full-fat coconut milk
¼ cup maple syrup
Juice of one lemon
1 teaspoon sea salt
3 scoops Superfood Matcha or Collagen Matcha Energizer
Place all crust ingredients into a food processor and blend until dough is formed.
In two muffin pans filled with liners, spread dough evenly. Place in freezer to chill while preparing the filling.
Put all filling ingredients in the food processor and blend until well combined.
Remove muffin pan from freezer and fill about ¾ way full with filling mixture.
Freeze for about 2 hours.
Defrost the cookies in the refrigerator for 20 minutes before serving.
